Coffee Smoothie
First of all, who doesn’t like coffee? Especially in Seattle…during autumn! Even if you don’t drink regular coffee, you might still sip on some decaf from time to time. After all, studies have shown that coffee-drinkers live longer than those who don’t consume the caffeinated beverage. And it doesn’t matter what kind of coffee you drink – you can still reap the longevity benefits and make this delicious and healthy breakfast smoothie! I love it because it only has five ingredients, kind of tastes like a chocolate shake (even though there’s no chocolate in it), and is under 300 calories! You can even make it the night before a busy morning so all you have to do is reach in the fridge and go.
The Recipe:
1/2 cup chilled coffee
1/2 cup milk (I use coconut milk)
1 frozen banana
1/4 cup oats
1 spoonful nut butter (I use almond butter)
Directions: Place all ingredients into a blender and blend until smooth. Pour into a glass to drink right away, or into a to-go cup and place in the fridge for tomorrow’s breakfast.
A couple of notes:
- When making this smoothie the night before, the oats will soak up some of the liquid, so make sure to stir or shake before consuming. Also, if you don’t like oatmeal, like me, you may not like making this smoothie the night before. I strongly prefer to make it right before I’m going to drink it.
- I originally used 1% milk, but switched to coconut milk to make it vegan, and have actually found that the coconut milk makes the smoothie creamier since it is thicker than dairy milk!
